I absolutely love this recipe for banana muffins. I found it in an old Ayurvedic cookbook from the 80’s. It substitutes canola oil for butter, and maple syrup for sugar. This recipe takes 35 minutes, and makes 6 or more muffins, depending on the size of your tins.
